"A L'ancienne" means "old-fashioned" because in the old days most Dijon mustards were coarse grained, not smooth. Maille mustards sold in the U.S. are now made in a Canadian plant (to avoid the 100% duty on French mustards) but don't worry - the quality is the same. This mustard won the Gold Medal for best grainy mustard at the 2006 World-Wide Mustard Competition.
