A wild and yummy spice blend with citrus, smoke, and heat from Chuck Evans, who introduced America to the chipotle. France controlled Mexico for less than a decade and were defeated on Cinco de Mayo 1862. Combining the native chile chipotle with the French "L'Orange" spice was the inspiration for this seasoning. Sprinkle generously on duck, pork, chicken and seafood.
