This is the legendary wine vinegar of Banyuls, from the southwest of France. More rare than Balsamic, Banyuls vinegar is made from a strong fortified wine indigenous to that part of France and has elegant penetrating flavors that provide the base for a most distinctive vinaigrette. Also superb for deglzing a pan. Very limited supply.
