Ingredients:

6 oz. can of water packed Albacore tuna
- 1/4

Scallions, diced
- 1/4
cup
Terrapin Ridge Wasabi Lime Mustard
- 2
tablespoon
Lite mayonaisse or non-fat yogurt

Salt and pepper to taste

Slices of cucumber
- 8
Slices of your favorite sandwich bread

Directions:

Combine the first 5 ingredients and refrigerate. Top four slices of bread with 4 cucumber slices each and spread on tuna salad. Top with additional bread slices. Makes 4 sandwiches.
For a fun appetizer or snack, place a slice of cucumber topped with Wasabi Lime Tuna Salad on a sesame or rice cracker.
