Balsamic and Herb Panini


Ingredients:
  • 4  Squares foccaccia or ciabatta bread split horizontally
  • 4  Slices red onion 1/4 inch thick
  • 4  Romaine lettuce leaves, cleaned
  • 8  Slices roma tomato
  • 1/4  cup  Terrapin Ridge Balsamic and Herb Mustard
  • 1/4  cup  Mayonnaise
  • 4  teaspoon  Extra virgin olive oil
  • 4  Slices mozzerella cheese
  • 1/4  cup  Parmesan cheese
  • 4  Slices mortadella
  • 4  Slices Genoa salami
  • 8  Slices Prosciutto
  • 1/2  cup  Black olives or tapenade
Directions:
Layout each bottom half of bread. Spread a tablespoon of Terrapin Ridge Balsamic and Herb Mustard on each slice. Layer on each a slice of mozzarella, mortadella, salami, and two slices of prosciutto. Drizzle each with a teaspoon of extra virgin olive oil. Sprinkle each top half with a tablespoon of parmesan cheese and two tablespoons of black olives. Spread each top half with a tablespoon of mayonnaise. Layer on a romaine lettuce leaf, two slices of tomatoes, and a slice of red onion. Cover each bottom half with a top half and gently press together.
