Balsamic and Herb Roasted Vegetable Sandwich


Ingredients:
  • 1  Zucchini or yellow squash, sliced lengthwise
  • 2  Red or green peppers, halved and seeded
  • 2  Portabella mushrooms, destemed and halved
  • 1  cup  Terrapin Ridge Balsamic and Herb Mustard
  • 2  Pita bread, cut in half
  • 4  Leaves Romaine lettuce, cleaned
  • 1/4  lb  Goat cheese
  • 1  Red onion, sliced
  • 1  Sliced large tomato
Directions:
Preheat broiler on oven, and line a baking dish with foil. Rub prepared vegetables (except Romaine lettuce) with Terrapin Ridge Balsamic and Herb Mustard and arrange on three quarters of baking sheet. Cut pitas in half to form a pocket, and wrap tightly in foil and place on reserved space on the baking sheet. Broil 6 inches form heat, for 5 minutes. Remove pan from oven, and turn vegetables over and return only the vegetables to oven broiler for another 5 minutes. Open the foil package and place a romaine lettuce leaf in each pita half. Fill pita halves with roasted vegetables and to with goat cheese. This is also delicious on foccacia or flat bread. Makes 4 sandwiches.
